Eves Recipes: Fresh Roasted Tomato & Basil Winter Soup

Today we thought we would share one of our go to delicious winter warming recipes with you! This is so yummy, so warming and so easy to make! 
Being such a versatile food, tomato soup can be eaten any time of any day, have it as a starter, or a large bowl for lunch or dinner... or maybe your just feeling cold and need a bowl of warm goodness!

For a serving of 6, the ingredients needed for this soup are:

1kg fresh tomatoes
A few sprigs of thyme
3-4 cloves of garlic
1 medium white onion
1 Tbsp Butter
Dash of Balsamic Vinegar
1 Tbsp Tomato Puree
250 ml Vegetable Stock
1 handful of fresh basil
Salt & Pepper
Olive Oil

1. Firstly, you need to chop your tomatoes in half, sprinkle with salt, pepper & olive oil, throw in some garlic and thyme and roast in the oven for 30 mins 200c.

2. Fry the onion in butter until caramelised over a medium heat, stir in the tomato puree, and add some balsamic vinegar.

3. Pour in the tomatoes and garlic, add the stock and basil, and simmer for a few minutes

4. Blend blend blend

5. Enjoy!
